Cake- 1 can (15 oz) pumpkin (not pumpkin pie mix) 1 package (8 oz) cream cheese, cut into 16 pieces, softened 1/4 teaspoon vanilla 3 eggs 3/4 cup sugar 1/2 cup Original Bisquick™ mix (Ive used other ready to use pancake mixes, they work fine) 1 1/2 teaspoons pumpkin pie spice
How to: Preheat oven to 350F, grease a 9 inch pie plate. I like to use store bought graham cracker disposable aluminum pans, they make nice gifts. Mix all cheesecake ingredients in a blender or with a mixer until smooth and pour into the plate, bake for about 45 mins and let it cool down. In the mean time mix all the toping ingredients together and spread over the cool pie/cheesecake. Refrigerate for a couple of hours until chilled. Store in the fridge.
