Ingredients

2 C sugar
1 3/4 C flour (all purpose)
3/4 C cocoa powder
1 1/2 t baking powder
1 1/2 t baking soda
1 t salt
2 eggs
1 C milk
1/2 C vegetable oil
2 t vanilla extract
1C boiling water
frosting
2 packages of cream cheese (8oz each), softened
1/2 C butter
2 C powdered sugar
1 t vanilla extract
How To
cupcakes
- Heat oven to 350 F. Line muffin cups
- Stir the dry ingredients together, then add the wet ingredients (not the water yet) and beat for 2 mins on high speed. Then add the boiling water. The mixture will be very thin. This will make your muffins super moist and fluffy.
-Fill cups 2/3 full with batter; bake for 20-25 mins (I always bake for 22 mins). Let cool before frosting.

-Cream together butter and cream cheese
- Mix in vanilla; gradually mix in the powdered sugar
- Place some in piping bag and make some cool designs!
- Store in fridge
